1-Dissolve the Yeast and Prepare the Initial Dough: Start by dissolving the yeast in the cold milk. Then, melt the butter and beat it with the egg, sugar, and salt in the Thermomix bowl for 10 seconds at speed 6. Add the milk with the dissolved yeast and the sifted flour and program for 20 seconds at speed 6. Remove the dough, shape it into a ball, make a deep cross, and wrap it in plastic wrap. Let it rest in the refrigerator for a few hours (no more than 12 hours).

2-Shape the Puff Pastry Dough: Remove the dough from the refrigerator and prepare it on a floured surface. Roll it out in a cross shape and place the 200g of butter in the center. Fold the dough over the butter to form a package and beat with a rolling pin until manageable. Then, roll out the dough in one direction until you get a rectangle. Fold in three parts, turning 90º between each fold. Wrap in plastic wrap and let it rest in the refrigerator for 20 minutes. Repeat this process three times in total.

3-Shape the Croissants: Roll out the dough on a floured surface, forming a rectangle of 33x20cm and 0.4cm thick. Place the templates in the form of triangles and cut the dough. Roll up each triangle from the base to the tip to form the croissants.

4-Bake the Croissants: Place the croissants on a baking tray lined with parchment paper and let them rest until they double in size, approximately 2 hours. Preheat the oven to 220ºC, brush the croissants with beaten egg, and bake at 200ºC for 15 minutes, or until golden brown.
